cabbage soup with welsh rarebit
Ingredients
For the cabbage soup 1 tbsp vegetable oil ¼ green cabbage, shredded 250ml/9fl oz vegetable stock salt and freshly ground black pepper 2 tbsp white wine For the welsh rarebit 140g/5oz mature cheddar cheese, grated 2 tsp wholegrain mustard 1 tsp Worcestershire sauce 2 tbsp double cream 1 slice bread Method 1. Heat the oil in a medium saucepan and gently fry the cabbage for one to two minutes. 2. Pour in the vegetable stock, seasoning and wine and bring to the boil. Reduce the heat and simmer gently for eight to ten minutes. 3. Preheat the grill to a medium setting. 4. To make the rarebit, place the cheese, mustard, Worcestershire sauce and cream into a pan and heat gently, stirring occasionally, until melted. 5. Toast the bread on one side under the grill until golden. 6. Turn the bread over and spoon the mixture over. Return to the grill and grill again until golden. mmmmmmmmmmm. full tummy Grm |
